In a moment that felt both nostalgic and quietly extraordinary, Wilderness brought a cherished taste of the Okavango Delta to Gaborone, treating guests to the iconic Tswii Pasta of Vumbura Plains – lovingly crafted and personally served by Wilderness Head Chef, Gloria “MaGlo” Gaesemodimo. For those who have travelled through Ngamiland or grown up near the Delta’s waterways, tswii – the water lily tuber – is more than an ingredient. It is memory. It is heritage. It is one of the quiet treasures of Botswana’s culinary story. 

On this evening, Chef MaGlo brought that story to life with grace, pride, and the kind of warmth that only she can bring. She shared the origins of tswii as it has been prepared for generations, and how Wilderness has honoured this tradition by gently evolving it into a dish that has become synonymous with Vumbura Plains. The transformation into pasta is not a reinvention, but a respectful celebration; it is a way of taking what is ours and elevating it for the world to experience.

“We carry our landscapes in our food”, MaGlo reflected as guests watched her roll and fold each piece by hand. “Tswii reminds us of where we come from. At Vumbura, we have simply found a new way to honour it – a way that keeps the tradition alive while sharing its beauty with guests from across the world”.
